We do the same, essentially, but make sure the food item is not expired.
The food bank (local) to which we send the food will not accept
out-of-date items.

We run Nov 15 - Dec 18

We have done "food for fines" in the past and are planning to this year
as well.

1 nonperishable food item (or stuff like paper towels, soap, etc.)
clears $1 fine.

Lost/damaged items cannot be paid for with food.

Food cannot be used to pay off any collection agency charges.

We plan to run our campaign for a month- November 15 to December 15.

Our donations will go to our local Salvation Army.

I know you folks would know this stuff. We're going to do Fines for Food
in December. What's the current "pricing" for that? 2 cans for a dollar?
A dollar a can? Lower? Higher? We've never done this.
