The LibSuccess Wiki has some sites listed:
http://libsuccess.org/index.php?title=Social_Networking_Software and a
group on Facebook: http://www.facebook.com/group.php?gid=8408315708

My presentation on Facebook is on Slideshare
http://www.slideshare.net/nengard/using-facebook-to-connect-with-customers-1092439
and I have a hand out online as well
http://www.web2learning.net/facebook-101 (the guide includes links to
articles about facebook & libraries).

In answer to being able to hide fans - you can't. And I don't know
how important is it - but keep in mind that only the fans' picture and
names show if that's all they set their profile to show to
non-friends.
