If you will actually be moving this cart from place to place, invest in a
nice cart with very big wheels, that moves smoothly over bumps, has no
chance of falling over.   If not, you will regret it every single day.  A
lockable cabinet is also nice, for the efficiency of keeping all supplies
together and organized.

Our library has recently added a lovely outdoor seating area and we are
considering the possibility of adding a coffee cart service. I would be
interested to hear from any library that has purchased a cart/ worked with
