A previous employer paid a "differential" of $75 per bimonthly pay
period when working Saturdays or Sunday and I believe it was untaxed.

Does anyone offer premium pay for working on Saturdays and Sundays?  For
my employees, these hours are not above and beyond a forty hour week,
which would qualify for overtime.  If anyone offers such an
incentive/reward for weekend work, I would appreciate knowing the
details.  Thank you very much.
