Well, I couldn't resist, in case it's the "right one."
My well-worn 1990 13th edition of Fannie Farmer's Cookbook, is copyright
1979, 1990.
ISBN 0-394-56788-9.
Under "Quick Breads," on page 540 is this "Banana Nut Bread."
"This is pure and simple banana bread, heavy, moist, and dark. (8 1/2 x 4
1/2 x 2 1/2 inch loaf)
3 ripe bananas, well mashed
2 eggs, well beaten
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup coarsely chopped walnuts
Preheat the oven to 350 degrees. Grease a loaf pan. Mix the bananas and eggs
together in a large bowl. Stir in the flour, sugar, salt, and baking soda.
Add the walnuts and blend. Put the batter in the pan and bake for 1 hour.
Remove from the pan to a rack. Serve still warm or cooled, as you like it."
Enjoy!
Best,
DrWeb
