While not as weighty a topic as those you proposed, one of our most 
successful series dealt with gardening.  You can do this quite 
inexpensively if you have to.  We contacted our state agricultural 
extension service, which offers a speakers' bureau, and found a speaker to 
talk about container gardening.  This one was free.  The Master Gardener 
program also offers free speakers.

The next program was Gardening in Deer Country (which should be fiction, at 
least in New England).  I contacted the author of the book by the same 
name, and he came to CT for $50.  Local garden centers or  landscape 
designers will often do a program free to promote their services.

We had a very successful cooking series, too -- Chinese foods, chocolates 
(very popular), and holiday entertaining.

Do your volunteers have special interests?  A local club might be a source 
for speakers.
